Pizza bases made from cauliflower are a huge hit with dieters, who are reluctant to give up this tasty, yet fatty treat.
Admittedly, a cauliflower pizza doesn’t have quite the crispy crunch of the real thing — but it’s so much healthier.
And then there’s the fact that cauliflowers are really very good for you.
They are an excellent source of fibre, omega 3 fatty acids — good for your brain — and vitamin C. Forget simply adding a little extra veg to your pasta sauce — a whole cauliflower head can be used to make ‘pasta’ sheets to layer into your lasagne.
This can be further enhanced by adding chopped almonds to the mix.Season with salt and pepper and cook until the mushrooms are tender and golden brown.Turn 12oz of cauliflower into ‘rice’ by pulsing in a food processor until it is in grain-sized pieces.Fry a diced onion along with two cloves of crushed garlic, then add these to the cauliflower and almond mixture.Give your falafel mix a spicy kick by stirring in a teaspoon of ground cumin, another of ground coriander, and a handful of chopped fresh parsley, followed by two whole beaten eggs.
